How To Make Couscous with Chorizo & Chickpeas

Ingredients
- 1 cup couscous
- 2 cups chicken or vegetable broth
- 1 tablespoon olive oil
- 1 chorizo sausage, sliced
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon smoked paprika
- 1 can (15 ounces) chickpeas, drained and rinsed
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

In a medium saucepan, bring the chicken or vegetable broth to a boil. Remove from heat and stir in the couscous. Cover and let sit for 5 minutes, then fluff with a fork.

In a large skillet, heat the olive oil over medium heat. Add the sliced chorizo and cook until browned and crispy, about 5 minutes. Remove from the skillet and set aside.

In the same skillet, add the diced onion and minced garlic. Cook until softened, about 5 minutes.

Stir in the smoked paprika and cook for an additional minute.

Add the cooked chorizo, chickpeas, and cooked couscous to the skillet. Stir well to combine and heat through. Season with salt and pepper to taste.

Serve hot, garnished with fresh chopped parsley.
