Ingredients

  • 1 cup of rice
  • 1 cup of quinoa
  • 1 pound of prawns, peeled and deveined
  • 2 tablespoons of soy sauce
  • 1 tablespoon of rice vinegar
  • 1 tablespoon of sesame oil
  • 1 avocado, sliced
  • 1 carrot, julienned
  • 1 cucumber, thinly sliced
  • 4 nori sheets, cut into strips
  • Sesame seeds, for garnish
  • Sliced green onions, for garnish

Instructions

  1. Cook the rice and quinoa according to package instructions.

  2. In a large bowl, mix together soy sauce, rice vinegar, and sesame oil. Add the cooked prawns to the bowl and toss to coat.

  3. In individual serving bowls, layer the rice and quinoa mixture, followed by the marinated prawns, avocado, carrot, cucumber, and nori strips.

  4. Garnish with sesame seeds and sliced green onions.

  5. Serve immediately and enjoy!
