Ingredients

  • 1 lb prawns, peeled and deveined
  • 1 cup cooked grains (such as quinoa or brown rice)
  • 1 cup edamame, shelled
  • 1 cup carrots, julienned
  • 1 cup cucumber, diced
  • 1 avocado, sliced
  • 1 tbsp sesame seeds
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tsp ginger, grated
  • 1 tsp garlic, minced
  • 1 tsp sesame oil

Instructions

  1. In a small bowl, whisk together soy sauce, rice vinegar, honey, ginger, garlic, and sesame oil to make the dressing.

  2. Heat a large skillet over medium-high heat and add the prawns. Cook for 2-3 minutes on each side until they turn pink and opaque. Remove from heat.

  3. In four serving bowls, divide the cooked grains, edamame, carrots, cucumber, avocado, and prawns.

  4. Drizzle the dressing over the poke bowls and sprinkle with sesame seeds.

  5. Serve immediately and enjoy!
