How To Make Easy Sausage & Courgette Pilaf

Ingredients
- 2 cups long-grain white rice
- 4 sausages, thinly sliced
- 2 courgettes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 tsp dried thyme
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- Fresh parsley, for garnish
Instructions

Heat olive oil in a large pan over medium heat. Add the sausages and cook until browned.

Remove the sausages from the pan and set aside. In the same pan, add the onion and cook until translucent.

Add the garlic and courgettes to the pan and cook for 2-3 minutes until slightly softened.

Stir in the rice, dried thyme, paprika, salt, and black pepper. Cook for another 2 minutes, stirring constantly.

Pour in the chicken broth and bring to a boil. Reduce heat to low, cover the pan, and simmer for 20 minutes or until the rice is cooked and the liquid has been absorbed.

Stir in the cooked sausages and cook for an additional 3-4 minutes until heated through.

Garnish with fresh parsley before serving.
