How To Make Chorizo Pilaf
A flavorful and easy one-pot meal made with chorizo sausage and fragrant spices, mixed with fluffy rice and vegetables.

Ingredients
- 1 cup chorizo sausage, sliced
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 cup basmati rice
- 2 cups chicken broth
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1/4 teaspoon turmeric
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions

In a large skillet or pan, cook the chorizo sausage over medium heat until browned. Remove from the pan and set aside.

In the same pan, sauté the diced onion and minced garlic until fragrant and translucent.

Add the diced red bell pepper and cook for another 2-3 minutes.

Stir in the basmati rice, paprika, cumin, turmeric, and salt and pepper. Cook for 1-2 minutes until the rice is coated with the spices.

Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.

Stir in the cooked chorizo sausage and cook for another 2-3 minutes to heat through.

Serve the chorizo pilaf hot, garnished with fresh cilantro.
