How To Make Chickpea & Courgette Pilaf

Serves:

Ingredients

  • 1 cup basmati rice
  • 1 can chickpeas, drained and rinsed
  • 1 courgette, diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Wash the rice thoroughly and set aside.

  2. Heat olive oil in a large pan over medium heat. Add the onions and garlic and cook until they become translucent.

  3. Add the courgette to the pan and cook for 5 minutes, stirring occasionally.

  4. Add the cumin, turmeric, and paprika to the pan and stir well to coat the vegetables.

  5. Add the rice to the pan and stir to combine with the vegetables and spices.

  6. Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.

  7. Stir in the chickpeas and season with salt and pepper to taste. Cook for an additional 5 minutes to heat through.

  8. Remove from heat and let the pilaf rest for a few minutes before serving.

  9. Garnish with fresh cilantro before serving.
