Ingredients

  • 300g rigatoni pasta
  • 2 courgettes, sliced
  • 250g sausage, sliced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 400g can of chopped tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. Cook the rigatoni pasta according to package instructions. Drain and set aside.

  3. In a large frying pan, heat some olive oil over medium heat. Add the onion and garlic, and cook until softened.

  4. Add the sliced courgettes and sausage to the pan, and cook until lightly browned.

  5. Pour in the chopped tomatoes and sprinkle in the dried oregano and basil. Season with salt and pepper.

  6. Simmer the sauce for about 10 minutes, until it thickens slightly.

  7. Add the cooked rigatoni to the sauce and mix well.

  8. Transfer the mixture to a baking dish and sprinkle the grated Parmesan cheese on top.

  9. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and golden.

  10. Serve hot and enjoy!
