How To Make Sausage & Courgette Rigatoni
There’s a reason why pasta is a popular favorite. It’s such a multi-purpose dish that can be enjoyed in a multitude of ways. With so many pasta ideas to choose from, your biggest challenge will be deciding on which pasta recipes to go for!

Ingredients
- 8 oz rigatoni pasta
- 2 courgettes, sliced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 8 oz sausage, casing removed and crumbled
- 1 can (14 oz) diced tomatoes
- 1/2 cup chicken or vegetable broth
- 1 tsp dried oregano
- 1/2 tsp dried basil
- Salt and pepper to taste
- Grated Parmesan cheese, for serving
Instructions

Cook the rigatoni pasta according to package instructions. Drain and set aside.

Heat a large skillet over medium heat and add the sausage. Cook until browned and cooked through. Remove from the skillet and set aside.

In the same skillet, add the onions and courgettes. Cook until they start to soften, about 5 minutes. Add the garlic and cook for another minute.

Add the diced tomatoes, broth, dried oregano, dried basil, salt, and pepper to the skillet. Stir well and bring to a simmer.

Add the cooked sausage back to the skillet and let the sauce simmer for about 10 minutes to allow the flavors to meld together.

Add the cooked rigatoni to the skillet and toss well to coat the pasta in the sauce.

Serve the Sausage & Courgette Rigatoni with a sprinkle of grated Parmesan cheese on top.
