Ingredients

  • 1 cup of long-grain rice
  • 2 cups of water
  • 1/2 cup of dried apricots, sliced
  • 1/2 cup of fresh apricots, diced
  • 1 cup of heavy cream
  • 1/4 cup of grated Parmesan cheese
  • 1/4 cup of chopped fresh parsley
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a medium saucepan, combine the rice and water. Bring to a boil, then reduce heat to low and cover. Cook for 15-20 minutes until the rice is tender and the water is absorbed.

  2. In a separate small saucepan, combine the dried apricots and 1/2 cup of water. Simmer for 5 minutes until the apricots are soft. Drain the apricots and set aside.

  3. In the same saucepan, add the cream and bring to a low simmer. Stir in the cooked rice, fresh apricots, grated Parmesan cheese, and cooked dried apricots. Cook for an additional 5 minutes until heated through.

  4. Season with salt and pepper to taste. Stir in the chopped fresh parsley.

  5. Serve the creamy rice with double apricots hot.
