How To Make White Chocolate & Apricot Cheesecake

Ingredients
- 200g white chocolate, melted
- 250g cream cheese
- 150g digestive biscuits, crushed
- 50g unsalted butter, melted
- 100g apricot jam
- 150ml double cream
- 1 tsp vanilla extract
- Apricots, for garnish
Instructions

In a bowl, mix the crushed digestive biscuits and melted butter until well combined. Press the mixture into the base of a greased springform cake tin and refrigerate for 20 minutes.

In a separate bowl, beat the cream cheese until smooth. Gradually add the melted white chocolate and mix well. Stir in the double cream and vanilla extract until the mixture is creamy and well combined.

Pour the cheesecake filling onto the chilled biscuit base and smooth the top with a spatula. Drizzle the apricot jam over the top and swirl it into the cheesecake mixture using a knife.

Bake in a preheated oven at 160°C for 1 hour. Once baked, allow the cheesecake to cool completely in the tin before refrigerating for at least 4 hours or overnight.

Before serving, garnish the cheesecake with fresh apricots. Slice and enjoy!
