Ingredients

  • 2 cups long-grain rice
  • 4 cups vegetable broth
  • 1 cup broad beans
  • 1/4 cup chopped dill
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the rice under cold water until the water runs clear. Drain well.

  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until they become translucent.

  3. Add the rice to the pot and stir well to coat each grain with the oil mixture.

  4. Pour in the vegetable broth and bring to a boil. Reduce heat to low and cover the pot with a lid. Cook for 15 minutes.

  5. Stir in the broad beans and chopped dill. Replace the lid and cook for an additional 10 minutes or until the rice is tender and the liquid has been absorbed.

  6. Remove from heat and let the pilaf sit, covered, for 5 minutes.

  7. Fluff the pilaf with a fork before serving. Season with salt and pepper to taste.
