How To Make Bean & Dill Pilaf with Garlicky Yogurt

Ingredients
- 1 cup white rice
- 1 can (15 oz) white beans, drained and rinsed
- 1/4 cup chopped fresh dill
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups vegetable broth
- Salt and pepper to taste
- For the garlicky yogurt sauce:
- 1 cup plain yogurt
- 2 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- Salt to taste
Instructions

Rinse the rice under cold water until the water runs clear. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and cook until softened and fragrant, about 5 minutes.

Add the rice to the skillet and cook for another 2 minutes, stirring constantly.

Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender and all the liquid is absorbed.

In a separate bowl, combine the yogurt, minced garlic, fresh lemon juice, and salt. Mix well and set aside.

Once the rice is cooked, remove from heat and let it sit, covered, for 5 minutes.

Fluff the rice with a fork, then gently stir in the white beans and chopped dill.

Serve the pilaf hot with a dollop of the garlicky yogurt sauce on top.
