How To Make Broad Bean & Lancashire Cheese Tart

Serves:

Ingredients

  • 1 sheet of puff pastry
  • 1 cup broad beans, shelled
  • 200g Lancashire cheese, crumbled
  • 1 small red onion, thinly sliced
  • 2 cloves of garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat the oven to 200°C (400°F).

  2. Roll out the puff pastry and place it into a tart tin. Prick the base with a fork and blind bake for 10 minutes.

  3. In a pan, heat the olive oil and sauté the red onion and garlic until softened.

  4. Add the broad beans and cook for 5 minutes until tender. Season with salt and pepper.

  5. Remove the puff pastry from the oven and evenly spread the cooked onion and broad bean mixture onto the base.

  6. Scatter the crumbled Lancashire cheese over the top.

  7. Place the tart back in the oven and bake for another 25-30 minutes until the pastry is golden and the cheese has melted.

  8. Garnish with fresh parsley and serve hot.
