  • 2 cups cooked rice
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped green onions
  • 1/4 cup chopped red bell pepper
  • 2 eggs
  • Salt and pepper to taste
  • Cooking oil

Instructions

  1. In a large bowl, combine the cooked rice, breadcrumbs, Parmesan cheese, green onions, red bell pepper, eggs, salt, and pepper. Mix well.

  2. Heat a bit of cooking oil in a non-stick skillet over medium heat.

  3. Scoop 1/4 cup of rice mixture onto the skillet and flatten it with a spatula to form a round cake.

  4. Cook for 2-3 minutes on each side until golden brown.

  5. Repeat with the remaining rice mixture.

  6. Serve hot as an appetizer or side dish.
