How To Make Classic Minute® Rice Pudding
This sweet, delectable dessert is the perfect ender to any and every heavy meal! In fact, it’s great even as a stand-alone snack. Ingredients
- 1 cup Minute® Rice
- 2 cups milk
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 2 eggs, beaten
- Optional toppings: raisins, nutmeg, or whipped cream
Instructions

In a saucepan, bring the milk to a boil. Stir in the Minute® Rice, sugar, salt, vanilla extract, and ground cinnamon.

Reduce heat to low and simmer for about 15-20 minutes, or until the rice is tender and the mixture has thickened, stirring occasionally.

In a small bowl, lightly beat the eggs. Gradually stir in a small amount of the hot rice mixture into the beaten eggs, then slowly pour the egg mixture back into the saucepan, stirring constantly.

Cook for an additional 2 minutes, stirring constantly, until the mixture thickens slightly and the eggs are cooked through.

Remove from heat and let cool for a few minutes.

Serve warm or chilled, with optional toppings if desired.
