Ingredients

  • 1 cup orzo
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, chopped
  • 1 red onion, chopped
  • 3 cloves of garlic, minced
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/4 tsp red pepper flakes
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 425°F.

  2. Cook orzo according to package instructions, then drain and set aside.

  3. In a large bowl, combine the chopped veggies, garlic, olive oil, salt, black pepper, basil, oregano, thyme, and red pepper flakes. Toss to coat.

  4. Spread the veggie mixture on a baking sheet and roast for 20-25 minutes, stirring occasionally.

  5. In a large bowl, combine the cooked orzo with the roasted veggies. Sprinkle with Parmesan cheese and serve.
