How To Make Four-Cheese Truffled Macaroni and Cheese

- 8 oz elbow macaroni
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 cup crumbled Gorgonzola cheese
- 1/2 cup truffle oil
- 1/4 cup all-purpose flour
- 4 cups milk
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp nutmeg
- Fresh parsley, chopped (for garnish)
Instructions

Cook the macaroni according to the package instructions. Drain and set aside.

In a large saucepan, heat the truffle oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant.

Whisk in the flour and cook for an additional 2 minutes to make a roux.

Slowly pour in the milk, whisking constantly, until the mixture is smooth and thickened. Add the salt, pepper, and nutmeg.

Reduce the heat to low and gradually add the shredded cheddar, mozzarella, Parmesan, and crumbled Gorgonzola cheeses, stirring until melted and creamy.

Add the cooked macaroni to the cheese sauce, stirring to combine.

Transfer the macaroni and cheese to a baking dish and bake in a preheated oven at 350°F for 20 minutes, or until golden and bubbly.

Garnish with fresh parsley before serving.
