How To Make Crabmeat and Corn Soup

Ingredients
- 1 can of sweet corn kernels
- 200g of crabmeat
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 cups of chicken broth
- 1 cup of heavy cream
- 2 tablespoons of butter
- Salt and pepper, to taste
- Chopped parsley, for garnish
Instructions

In a large pot, melt the butter over medium heat. Add the onion and garlic, and cook until they are translucent and fragrant.

Drain the corn kernels and add them to the pot. Cook for 2-3 minutes, until they are slightly caramelized.

Add the crabmeat and stir well to combine.

Pour in the chicken broth and bring the soup to a boil. Reduce the heat to low and simmer for 10 minutes.

Using an immersion blender, puree about half of the soup until smooth and creamy.

Stir in the heavy cream and season with salt and pepper to taste. Cook for an additional 5 minutes.

Serve the soup hot, garnished with chopped parsley.
