How To Make Warm Lobster & Potato Salad with Truffled Mayonnaise

Ingredients
- 2 lobsters
- 4 potatoes
- 1 cup mayonnaise
- 2 tablespoons truffle oil
- Salt and pepper to taste
- Fresh chives, for garnish
Instructions

Preheat the oven to 375°F (190°C).

Bring a large pot of salted water to a boil. Add the lobsters and cook for about 10 minutes, or until the shells turn bright red. Remove the lobsters from the pot and let them cool. Once cooled, remove the meat from the shells and chop into bite-sized pieces.

In the same pot of boiling water, add the potatoes and cook until tender, about 15-20 minutes. Drain and let cool slightly, then cut into bite-sized pieces.

In a small bowl, whisk together the mayonnaise and truffle oil until well combined. Season with salt and pepper to taste.

In a large mixing bowl, combine the lobster, potatoes, and truffled mayonnaise. Gently toss until everything is well coated.

Transfer the salad to a serving dish and garnish with fresh chives.
