How To Make Truffled Parsnip & Parmesan Bruschetta

Ingredients
- 4 parsnips, peeled and thinly sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 slices of crusty bread
- 1 tablespoon truffle oil
- 1/4 cup grated parmesan cheese
- 1 tablespoon chopped fresh parsley
Instructions

Preheat the oven to 400°F (200°C).

Place the parsnips on a baking sheet and drizzle with olive oil. Season with salt and pepper.

Roast the parsnips in the oven for 20-25 minutes, or until golden brown and crispy.

While the parsnips are roasting, toast the bread slices until crisp.

Remove the parsnips from the oven and drizzle with truffle oil. Toss to coat evenly.

Top each slice of toasted bread with a generous amount of the roasted parsnips.

Sprinkle the parmesan cheese over the parsnips and return to the oven for 3-4 minutes, or until the cheese is melted and bubbly.

Remove from the oven and garnish with fresh parsley.
