Ingredients

  • 8 oz penne pasta
  • 2 cups fresh spinach leaves
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup chopped walnuts
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Cook penne pasta according to package instructions. Drain and set aside.

  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute.

  3. Add fresh spinach to the skillet and cook until wilted.

  4. Add cooked penne pasta to the skillet and toss to combine.

  5. Stir in shredded mozzarella cheese and grated Parmesan cheese until melted and creamy.

  6. In a separate small pan, toast the chopped walnuts over medium heat until fragrant and golden brown. Set aside.

  7. Divide the penne pasta among serving plates and sprinkle with toasted walnut crumble.

  8. Serve hot and enjoy!
