Ingredients

  • 1 lb pork tenderloin, cut into thin strips
  • 1/4 cup soy sauce
  • 2 tbsp peanut butter
  • 2 tbsp honey
  • 1 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1/4 tsp red pepper flakes (optional)
  • 2 apples, cored and thinly sliced
  • 1 cup shredded cabbage
  • 1/2 cup shredded carrots
  • 1/4 cup cilantro, chopped
  • 1/4 cup peanuts, chopped

Instructions

  1. In a bowl, combine soy sauce, peanut butter, honey, lime juice, garlic, ginger, and red pepper flakes. Mix well.

  2. Add the pork strips to the marinade and let it sit for 10 minutes.

  3. Preheat grill or grill pan over medium-high heat.

  4. Thread the marinated pork strips onto skewers.

  5. Grill the skewers for 3-4 minutes per side, or until cooked through.

  6. In a large bowl, combine sliced apples, shredded cabbage, shredded carrots, and chopped cilantro. Mix well.

  7. Serve the grilled satay pork skewers with the crunchy apple salad.

  8. Garnish with chopped peanuts.
