How To Make Butternut Squash, Sausage, Spinach & Mushroom Pasta Bake

Ingredients
- 8 oz penne pasta
- 2 cups butternut squash, cubed
- 1 lb Italian sausage, casings removed
- 1 cup baby spinach
- 1 cup mushrooms, sliced
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
- Salt and pepper to taste
Instructions

Preheat the oven to 375°F (190°C).

Cook the penne pasta according to package instructions, then drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.

Add the Italian sausage to the skillet, breaking it up with a wooden spoon, and cook until browned and cooked through.

Add the butternut squash, mushrooms, dried thyme, dried rosemary, salt, and pepper to the skillet. Cook until the squash is tender.

Stir in the baby spinach and cooked penne pasta, mixing well to combine.

Transfer the mixture to a greased baking dish. Top with mozzarella and Parmesan cheese.

Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.

Remove from the oven and let it cool slightly before serving.
