
How To Make Meal Prep Shrimp
Looking for a yummy and healthy dish? Then, try this meal prep shrimp! This easy recipe combines Cajun flavors and healthy veggies.
Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 tbsp cajun seasoning
- 1 medium zucchini, sliced
- ½ bunch asparagus, trimmed and cut in chunks
- 2 bell peppers, chopped
- 3 garlic cloves, minced
- ÂĽ cup low-sodium vegetable broth
Instructions

In a large bowl, combine shrimp with olive oil and cajun seasoning. Toss until coated.

Heat the oil in a large skillet over medium-high heat. Cook the shrimp for 3 to 4 minutes, stirring regularly. Remove from the pan and transfer to a plate.

In the same pan, add zucchini, bell peppers, and asparagus, and fry for 2 to 3 minutes. Add minced garlic and cook for about 1 minute until fragrant.

Pour in the vegetable broth, and allow the sauce to reduce down slightly.

Divide the shrimp in meal prep containers. Add the cooked veggies and sprinkle with chopped parsley. Spoon the sauce over shrimp and veggies or keep in a separate container. Enjoy!
