Ingredients

  • 1 can (400g) chickpeas, drained and rinsed
  • 2 cloves of garlic, minced
  • Juice of 1 lemon
  • 1/4 cup tahini
  • 1/4 cup extra virgin olive oil
  • 1/2 cup fresh coriander leaves
  • Salt to taste
  • Optional toppings: extra virgin olive oil, chopped coriander, lemon zest

Instructions

  1. In a food processor, add the chickpeas, garlic, lemon juice, tahini, olive oil, and fresh coriander leaves.

  2. Blend until smooth and creamy, adding 1-2 tablespoons of water if needed for a smoother consistency.

  3. Taste and season with salt according to your preference.

  4. Transfer the hummus to a serving dish and drizzle with extra virgin olive oil.

  5. Garnish with chopped coriander and lemon zest, if desired.
