How To Make Sesame & spring onion stir-fried udon with crispy tofu

Ingredients
- 8 ounces udon noodles
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 1 cup sliced spring onions
- 1 cup diced tofu
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- 1 teaspoon chili flakes (optional)
- Salt, to taste
- Pepper, to taste
- Sesame seeds, for garnish
Instructions

Cook the udon noodles according to package instructions. Drain and set aside.

Heat the sesame oil and vegetable oil in a large pan or wok over medium-high heat.

Add the spring onions and tofu to the pan and stir-fry for 2-3 minutes, until the tofu is crispy and golden brown.

Push the tofu and spring onions to one side of the pan and add the minced garlic to the empty space. Cook for 30 seconds, until fragrant.

In a small bowl, whisk together the soy sauce, oyster sauce, rice vinegar, sugar, and chili flakes (if using).

Pour the sauce over the tofu, spring onions, and garlic. Stir well to coat everything evenly.

Add the cooked udon noodles to the pan and toss everything together until well combined. Cook for an additional 2-3 minutes to heat through.

Season with salt and pepper to taste.
