Serves:

Ingredients

  • 500g squid, cleaned and sliced into rings
  • 2 tbsp olive oil
  • 2 cloves of garlic, minced
  • 1/4 cup brandy
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant.

  2. Add the squid rings to the skillet and cook for about 5 minutes, until they are opaque and tender.

  3. Remove the skillet from the heat and carefully add the brandy. Return the skillet to the heat and cook for another 2 minutes, allowing the brandy to reduce slightly.

  4. Reduce the heat to low and pour in the heavy cream. Stir well to combine and simmer for about 5 minutes, until the sauce thickens.

  5. Season with salt and pepper to taste.

  6. Serve the squid with the creamy brandy sauce, garnished with fresh parsley.
