How To Make West Indian sweet potato curry

Ingredients
- 2 medium sweet potatoes, peeled and cubed
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/2 tsp curry powder
- 1 can coconut milk
- 1 cup vegetable broth
- 1 tbsp oil
- Salt, to taste
- Fresh cilantro, for garnish
Instructions

Heat oil in a large pan over medium heat. Add onions and garlic, and sauté until translucent.

Add the sweet potatoes, bell pepper, and spices (cumin, coriander, turmeric, and curry powder). Stir well to coat the vegetables with the spices.

Pour in the coconut milk and vegetable broth. Bring to a simmer and cook for about 25 minutes, or until the sweet potatoes are tender.

Season with salt according to taste.

Garnish with fresh cilantro before serving.

Serve hot with steamed rice or naan bread.
