Ingredients
- 1 lb pork tenderloin, sliced into thin strips
- 2 tbsp Thai red curry paste
- 1 can (14 oz) coconut milk
- 1 cup chicken broth
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- 2 tbsp brown sugar
- 1 cup unsalted peanuts
- 1 red bell pepper, thinly sliced
- 1 cup frozen peas
- Fresh cilantro, for garnish
- Cooked rice, for serving
Instructions

In a large pan or wok, heat some oil over medium-high heat. Add the pork strips and cook until browned, about 5 minutes.

Add the Thai red curry paste and cook for another minute, stirring constantly.

Pour in the coconut milk, chicken broth, fish sauce, soy sauce, and brown sugar. Stir to combine.

Reduce the heat to low and simmer for 30 minutes, or until the pork is cooked through and tender.

Stir in the peanuts, red bell pepper, and frozen peas. Cook for an additional 5 minutes, until the vegetables are heated through.

Serve the Thai pork and peanut curry over cooked rice, garnished with fresh cilantro.
