You wouldn’t pass up on making this delicious family-friendly crock pot dish made of corned beef and cabbage on St. Patty’s Day, would you?

Total: 5 hours 40 minutes

Serves:

Ingredients

  • 2lbscorned beef brisket,lean, all fat trimmed off
  • 1cuppearl onions,frozen
  • 2medium carrots,peeled and cut into chunks
  • 2medium parsnips,peeled and cut into chunks
  • 1small head cabbage,cut into 6 wedges
  • ¼cupparsley,fresh, chopped
  • 2bay leaves
  • tspwhole peppercorns

Instructions

  1. In a 5 to 6 qt crock pot, place brisket, carrots, parsnips, pearl onions, parsley, bay leaves, peppercorns and 3 cups of water.

  2. Cover and cook on high 4 hours.

  3. Add cabbage, cook on HIGH SETTING 1 hour 20 minutes more.

  4. Remove meat, slice and serve with Cauliflower Puree or Buttermilk Mashed Potatoes.
