How To Make Tomato Zucchini Casserole

Ingredients

  • 4 medium tomatoes, sliced
  • 2 medium zucchinis, sliced
  • 1 onion, thinly sliced
  • 2 cloves of garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup bread crumbs
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large baking dish, layer half of the sliced tomatoes, zucchinis, onions, and garlic.

  3. Drizzle with olive oil and sprinkle with half of the dried basil, dried oregano, salt, and pepper.

  4. Repeat the layering process with the remaining vegetables and seasonings.

  5. In a small bowl, mix together the grated Parmesan cheese and bread crumbs.

  6. Sprinkle the Parmesan breadcrumb mixture evenly over the casserole.

  7. Bake in the preheated oven for 45 minutes or until the vegetables are tender and the top is golden brown.

  8. Serve hot and enjoy!
