A delicious low-carb casserole filled with ground beef, vegetables, and a creamy cheese topping.

Ingredients
- 1 lb ground beef
- 1/2 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 zucchini, chopped
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 3/4 cup tomato sauce
- 1 cup shredded cheddar cheese
- 1/4 cup cream cheese
- 2 tbsp chopped parsley
Instructions

Preheat oven to 375°F.

In a skillet, cook the ground beef until browned. Add in onion, garlic, red bell pepper, zucchini, oregano, basil, salt, and pepper. Cook until vegetables are tender.

Stir in tomato sauce and pour mixture into a greased casserole dish.

In a separate bowl, mix together cheddar cheese and cream cheese. Spread cheese mixture over beef mixture.

Bake in preheated oven for 20-25 minutes, or until cheese is bubbly and golden.
