Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup of white rice
  • 1 can of black beans, drained and rinsed
  • 1 ripe mango, peeled and diced
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 2 cloves of garlic, minced
  • 1 tbsp of olive oil
  • 1 tsp of chili powder
  • 1/2 tsp of cumin
  • 1/2 tsp of paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a baking dish.

  2. In a large skillet, heat the olive oil over medium heat. Add the onion and bell pepper, and sauté until softened.

  3. Add the garlic, chili powder, cumin, paprika, salt, and pepper to the skillet. Cook for another minute.

  4. Push the onion and pepper mixture to one side of the skillet and add the chicken breasts. Cook for about 5 minutes on each side, until browned.

  5. In a separate pot, cook the rice according to package instructions.

  6. In the greased baking dish, combine the cooked rice, black beans, and diced mango. Mix well.

  7. Place the browned chicken breasts on top of the rice and bean mixture in the baking dish.

  8. Cover the dish with foil and bake for 30 minutes.

  9. Remove the foil and bake for an additional 10-15 minutes, until the chicken is cooked through and the top is golden brown.

  10. Serve the mango chicken, bean, and rice bake hot, garnished with fresh cilantro.
