How To Make Low-Carb, Twice-Baked Cauliflower Casserole

Ingredients
- 1 large head of cauliflower
- 4 slices of bacon, cooked and crumbled
- 1 cup of shredded cheddar cheese
- 1/2 cup of sour cream
- 2 green onions, chopped
- 1/4 cup of grated Parmesan cheese
- 1/2 teaspoon of garlic powder
- Salt and pepper, to taste
Instructions

Preheat your oven to 400°F (200°C).

Cut the cauliflower into florets and steam until tender, about 10 minutes.

Drain the cauliflower and transfer it to a large bowl. Mash the cauliflower until it resembles mashed potatoes.

Add the cooked bacon, shredded cheddar cheese, sour cream, green onions, Parmesan cheese, garlic powder, salt, and pepper to the bowl. Mix until well combined.

Transfer the mixture to a greased baking dish. Sprinkle additional cheddar cheese on top, if desired.

Bake for 25-30 minutes, or until the cheese is melted and bubbly.
