How To Make Low Carb Taco Casserole Recipe
A flavorful and healthy casserole filled with taco seasoned ground beef, cauliflower rice, and cheese.

Ingredients
- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 head cauliflower, riced
- 1 cup salsa
- 1 cup shredded cheddar cheese
- Sour cream and chopped cilantro, for serving
Instructions

Preheat the oven to 375°F.

In a large skillet, cook the ground beef in olive oil over medium heat until browned and cooked through. Drain any excess fat.

Add the onion and garlic to the skillet and cook until softened.

Stir in the chili powder, cumin, paprika, salt, and pepper.

Add the riced cauliflower and cook until tender, about 5-7 minutes.

Spread the beef mixture into the bottom of a 9×13 inch baking dish.

Top with salsa and shredded cheese.

Bake for 20-25 minutes or until the cheese is melted and bubbly.

Serve with sour cream and chopped cilantro.
