Ingredients
- 2 leeks, sliced
- 1 tbsp olive oil
- 2 cloves of garlic, minced
- 200g chorizo sausage, sliced
- 400g can of butter beans, drained and rinsed
- 1 liter chicken or vegetable broth
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

In a large pot, heat the olive oil over medium heat. Add the sliced leeks and minced garlic. Cook until softened, about 5 minutes.

Meanwhile, in a separate pan, cook the chorizo slices until crispy. Set aside.

Add the butter beans to the pot with the leeks and garlic. Pour in the broth and bring to a simmer. Cook for 10 minutes.

Using a blender or immersion blender, puree the soup until smooth. Season with salt and pepper to taste.
