How To Make Butter Bean, Grilled Courgette, Roast Red Pepper & Chorizo Salad

Ingredients
- 400g butter beans
- 2 courgettes
- 2 red peppers
- 150g chorizo, sliced
- 2 tbsp olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions

Preheat the grill to high.

Rinse and drain the butter beans, then set aside.

Slice the courgettes and red peppers into thick strips.

Toss the courgettes, red peppers, and chorizo in olive oil.

Grill the courgettes and red peppers for about 5 minutes on each side, or until charred and tender.

In a large bowl, combine the grilled vegetables, butter beans, and chorizo.

In a separate small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.

Pour the dressing over the salad and toss well to coat.
