How To Make Butter Bean, Chorizo & Spinach Baked Eggs
A flavorful and hearty dish made with butter beans, chorizo, and spinach, baked with eggs for a satisfying breakfast or brunch.

Ingredients
- 1 tbsp olive oil
- 4 oz chorizo, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) butter beans, drained and rinsed
- 2 cups fresh spinach
- 1 tsp smoked paprika
- Salt and pepper, to taste
- 4 large eggs
- Chopped fresh parsley, for garnish
Instructions

Preheat the oven to 375°F (190°C).

Heat the olive oil in an oven-safe skillet over medium heat. Add the chorizo and cook until browned, about 5 minutes.

Add the onion and garlic to the skillet and cook until softened, about 3 minutes.

Stir in the butter beans, spinach, smoked paprika, salt, and pepper. Cook for another 2 minutes until the spinach wilts.

Make four wells in the mixture and crack an egg into each well.

Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the egg whites are set but the yolks are still slightly runny.

Remove from the oven and let cool for a few minutes.

Garnish with chopped parsley and serve hot.
