A flavorful and hearty dish made with butter beans, chorizo, and spinach, baked with eggs for a satisfying breakfast or brunch.

Ingredients

  • 1 tbsp olive oil
  • 4 oz chorizo, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) butter beans, drained and rinsed
  • 2 cups fresh spinach
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • 4 large eggs
  • Chopped fresh parsley, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Heat the olive oil in an oven-safe skillet over medium heat. Add the chorizo and cook until browned, about 5 minutes.

  3. Add the onion and garlic to the skillet and cook until softened, about 3 minutes.

  4. Stir in the butter beans, spinach, smoked paprika, salt, and pepper. Cook for another 2 minutes until the spinach wilts.

  5. Make four wells in the mixture and crack an egg into each well.

  6. Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the egg whites are set but the yolks are still slightly runny.

  7. Remove from the oven and let cool for a few minutes.

  8. Garnish with chopped parsley and serve hot.
