Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 200g chorizo sausage, sliced
  • 2 cans butter beans, drained and rinsed
  • 400g canned tomatoes
  • 500ml chicken broth
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until fragrant.

  2. Add the chorizo sausage to the pot and cook until browned.

  3. Stir in the butter beans, canned tomatoes, chicken broth, and paprika. Season with salt and pepper.

  4. Bring the stew to a boil, then reduce heat to low and let simmer for 30 minutes.

  5. Serve the stew hot, garnished with fresh parsley.
