Ingredients

  • 1 pre-made pie crust
  • 2 leeks, sliced
  • 1 chorizo sausage, diced
  • 1 cup manchego cheese, grated
  • 4 eggs
  • 1 cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Roll out the pie crust and place it into a tart pan. Trim any excess crust.

  3. In a skillet, sauté the leeks and chorizo until softened and slightly browned.

  4. In a bowl, whisk together the eggs, milk, salt, and pepper.

  5. Spread the leek and chorizo mixture evenly onto the pie crust.

  6. Sprinkle the grated manchego cheese over the top.

  7. Pour the egg mixture over the filling.

  8. Bake in the preheated oven for 35-40 minutes, or until the tart is set and golden brown.

  9. Allow the tart to cool for a few minutes before serving.
