Ingredients

  • 1 cup dried white beans
  • 4 cups water
  • 2 cups chicken or vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 potatoes, peeled and diced
  • 1 carrot, sliced
  • 1 leek, sliced
  • 1 chorizo sausage, sliced
  • 1 ham hock or smoked ham bone
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Rinse the dried white beans and soak them in water overnight. Drain before using.

  2. In a large pot, bring the water and broth to a boil. Add the soaked white beans, onion, garlic, potatoes, carrot, leek, chorizo, ham hock or smoked ham bone, and bay leaf.

  3. Reduce the heat to low, cover the pot, and simmer for 1 hour and 30 minutes, or until the beans and vegetables are tender.

  4. Remove the ham hock or smoked ham bone from the pot and shred the meat. Discard the bone and return the meat to the pot.

  5. Season with salt and pepper to taste.

  6. Serve the Caldo Gallego hot, garnished with fresh parsley or cilantro.
