This dish is like a pizza baked in a casserole dish without the crust. You get lots of great Italian flavor without a lot of work.

How To Make Italian Zucchini Casserole
Ingredients
- 2 ½ lb zucchini, thinly sliced
- 1/2 cup onion, chopped
- 1/2 cup green pepper, chopped
- 4 tbsp butter
- 3 oz mushrooms, sliced
- 1 pkg dry spaghetti sauce mix
- 1 cup water
- 6 oz tomato paste
- 4 oz mozzarella cheese, shredded
- 2 tbsp parmesan cheese, grated
Instructions

Cook zucchini in boiling salted water for 4-5 minutes and then drain.

Sauté onion and green pepper in butter until tender. Remove from heat.

Add mushrooms, sauce mix, water, tomato paste, and mozzarella. Gently stir in the zucchini.

Transfer to a greased 7x11” baking dish and sprinkle with Parmesan cheese.

Bake at 350 degrees for 30-35 minutes. Serve.
