How To Make Zucchini and Potato Bake Recipe

Serves:

Ingredients

  • 2 zucchinis, sliced
  • 4 potatoes, peeled and sliced
  • 1 onion, thinly sliced
  • 2 cloves of garlic, minced
  • 1 cup grated cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a baking dish.

  2. In a large bowl, toss together the zucchini, potatoes, onion, and garlic.

  3. Drizzle with olive oil and season with thyme, oregano, salt, and pepper. Mix well.

  4. Transfer the vegetable mixture to the prepared baking dish.

  5. Sprinkle the grated cheddar and Parmesan cheese on top.

  6. Cover the dish with foil and bake for 30 minutes.

  7. Remove the foil and bake for an additional 15 minutes, or until the vegetables are tender and the cheese is golden and bubbly.

  8. Serve hot and enjoy!
