How To Make Summer Zucchini Casserole

Ingredients

  • 4 medium zucchinis, sliced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 cup of grated cheddar cheese
  • 1/2 cup of grated Parmesan cheese
  • 1/4 cup of breadcrumbs
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until they are softened and fragrant.

  3. Add the sliced zucchini to the skillet and cook for about 5 minutes, until they are just starting to soften. Season with salt, pepper, and dried basil.

  4. In a greased baking dish, layer half of the zucchini mixture. Sprinkle half of the cheddar and Parmesan cheese on top. Repeat with another layer of zucchini and cheese.

  5. Sprinkle the breadcrumbs evenly over the top layer of cheese.

  6. Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the casserole is golden and bubbly.

  7. Allow the casserole to cool for a few minutes before serving.
