How To Make Fried Bologna Casserole

Filled with bologna slices, mashed potatoes, and cheddar cheese, this kid-friendly bologna casserole is crispy and moist at the same time.

Preparation: 10 minutes
Cooking: 50 minutes
Total: 1 hour

  • 8slicesbologna
  • 3tbspbutter
  • 1onion,chopped
  • 4cupswarm mashed potatoes
  • cupscheddar cheese,shredded

  1. Preheat oven to 350 degrees F. Grease a 1½-quart baking dish.

  2. Heat a skillet over medium-high heat. Fry the bologna slices in the hot skillet until browned on both sides, about 1 minute per side. Drain on a paper towel-lined plate.

  3. Wipe excess grease from the skillet, reduce heat to medium, and stir in the butter and onion. Cook and stir for about 5 minutes until the onion has softened and turned translucent. Stir the onions into the warm mashed potatoes.

  4. Spread half of the mashed potatoes into the prepared baking dish. Layer with half of the fried bologna, and sprinkle with half of the cheese. Repeat with the remaining ingredients.

  5. Bake uncovered in the preheated oven for about 30 minutes until the cheese is bubbly and the center is hot.
