Ingredients

  • 1 lb chicken breasts, boneless and skinless
  • 1 cup white rice
  • 1 1/2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Season the chicken breasts with salt and pepper.

  3. In a large ovenproof skillet, heat the olive oil over medium heat. Add the chicken and cook for 5-6 minutes on each side, until browned. Remove the chicken from the skillet and set aside.

  4. In the same skillet, add the onion and garlic. Cook until softened, about 2-3 minutes.

  5. Add the rice, chicken broth, milk, thyme, and parsley to the skillet. Stir well to combine.

  6. Place the chicken breasts on top of the rice mixture in the skillet.

  7. Cover the skillet with aluminum foil and transfer it to the preheated oven. Bake for 25-30 minutes, until the rice is cooked and the chicken is fully cooked.

  8. Remove the skillet from the oven and sprinkle the shredded cheddar cheese on top of the chicken and rice.

  9. Return the skillet to the oven and bake for an additional 5 minutes, until the cheese is melted and bubbly.

  10. Remove from the oven and let it cool for a few minutes before serving.

  11. Serve the Easy Cheesy Chicken and Rice hot and enjoy!
