Ingredients

  • 4 duck breasts
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • salt and pepper to taste
  • 1 cup wild rice
  • 2 cups chicken broth
  • 1/4 cup dried cranberries
  • 1/4 cup chopped pecans
  • 2 green onions, sliced
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Score the skin of the duck breasts in a criss-cross pattern.

  3. Heat the olive oil in an oven-proof skillet over medium heat.

  4. Place the duck breasts in the skillet, skin-side down, and cook for 6-8 minutes until the skin is crispy and golden.

  5. Flip the duck breasts and cook for another 2 minutes on the other side.

  6. Transfer the skillet to the preheated oven and roast for 10-12 minutes for medium-rare, or until desired doneness.

  7. Remove the duck breasts from the skillet and let them rest for a few minutes before slicing.

  8. Meanwhile, cook the wild rice according to package instructions, using chicken broth instead of water for extra flavor.

  9. In a separate pan, heat a teaspoon of olive oil and sauté the minced garlic until fragrant.

  10. Add the cooked wild rice, dried cranberries, chopped pecans, sliced green onions, and herbs (thyme and rosemary).

  11. Stir everything together and cook for 3-4 minutes until heated through.

  12. Serve the sliced duck breasts on top of the wild rice pilaf.

  13. Garnish with fresh parsley.
