Ingredients

  • 4 catfish fillets
  • 1 cup cornmeal
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • Vegetable oil for frying
  • 4 soft rolls
  • Lettuce leaves
  • Sliced tomatoes
  • Sliced pickles
  • Remoulade sauce (store-bought or homemade)

Instructions

  1. In a shallow dish, mix together the cornmeal, paprika, garlic powder, cayenne pepper, salt, and pepper.

  2. Dredge each catfish fillet in the cornmeal mixture, pressing it firmly to adhere.

  3. In a large skillet, heat enough vegetable oil to cover the bottom of the pan to 350°F (175°C).

  4. Fry the catfish fillets for about 4-5 minutes per side, until golden brown and crispy. Remove from the oil and drain on paper towels.

  5. Toast the rolls in a toaster or on a grill until lightly golden and crisp.

  6. Spread a generous amount of remoulade sauce on each roll.

  7. Top with a lettuce leaf, a sliced tomato, a fried catfish fillet, and some sliced pickles.

  8. Serve the Catfish Po’ Boy sandwiches immediately.
