How To Make Ham and Cheddar Zucchini Frittata

Start your mornings right with a delicious slice of this cheddar zucchini frittata, that’s also loaded with savory ham, for a filling meal!

  • 2cupszucchini
  • 2tbspbutter
  • 6large eggs
  • ¼cupheavy cream
  • 1cupham,chopped
  • 1cupcheddar cheese
  • 1tspsalt
  • ¼tsppepper


  1. Preheat the oven to 325 degrees F.

  2. Using the larger side of a box grater, grate the zucchini. Using several paper towels, place the zucchini in the center and wring the zucchini to remove excess moisture.

  3. In an 8-inch cast iron skillet, melt the butter. Add the zucchini and sauté over medium heat until the moisture evaporates and zucchini is tender.

  4. In a medium bowl, whisk the eggs and heavy cream. Stir in the ham, cheddar cheese, salt and pepper, then add the zucchini. Pour the mixture into the skillet.

  5. Bake for 20 to 25 minutes until it is set.

  6. Slice, serve, and enjoy!
