Ingredients

  • 6 large eggs
  • 1 small zucchini, sliced
  • 1 tsp fresh marjoram leaves, chopped
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F.

  2. In a large bowl, whisk together the eggs, salt, pepper, and marjoram.

  3. Heat the olive oil in a 10-inch oven-safe skillet over medium heat.

  4. Add the zucchini slices and sauté until tender, about 5 minutes.

  5. Pour the egg mixture into the skillet with the zucchini.

  6. Cook until the edges start to set, about 4-5 minutes.

  7. Transfer the skillet to the oven and bake for 10-12 minutes or until the frittata is set.

  8. Let the frittata cool for a few minutes before slicing and serving.
